Posh, the Vancouver-based sukiyaki restaurant, has just opened an outpost in Victoria.

Sukiyaki is a Japanese cook-it-yourself-at-your-table style of eating. Big pot of bubbling broth on a burner; everyone dips in foods of their choice using chopsticks. Pluck out the food when it looks ready. Nibble on the food, have boisterous conversation, drink the broth. Call for more food to cook in the broth. Thin the broth a little with the provided hot water. Tell fellow diners what you like most. Try not to hog the good stuff for yourself. Try not to scoop away someone else's food, unless you're invited to do so. If you have kids along, warn them about the heat and fire, and how it's a very bad idea to touch the pot and an especially bad idea to tip the pot. You can end up smelling like the food you're eating.
You typically have a choice of broth, and you can add things, like more hot sauce.
There's a huge choice of things that you can ask for to cook in the broth. Thinly-sliced beef is often the star of the show. Other typical things: bean sprouts, tofu, choy, spinach, thin noodles, mini-corn, green onion, and mushrooms. Some restaurants bring a standard set of things to the table. At Posh, you get to check off what you'd like from a lengthy list.
After cooking, you can dip your food into a sauce, or a beaten raw egg.
