Don鈥檛 make light of聽food crisis

Re: 鈥淎 tasteless approach to eating better,鈥 column, Jan. 20. I usually find Jack Knox鈥檚 columns entertaining and poignant, but his Sunday effort was disheartening on several levels. His assertion that real food is tasteless is a load of bull.

I usually find Jack Knox鈥檚 columns entertaining and poignant, but his Sunday effort was disheartening on several levels.

His assertion that real food is tasteless is a load of bull. Our family eats almost exclusively whole-food meals, which, when prepared with proper knowledge of herbs and spices, are every bit as delicious as any pre-processed food. And the health benefits are enormous.

What鈥檚 more important is what all this tasty processed food is doing to our health. If you鈥檇 like to spend your final years on earth in pain and debilitation while consuming many medications just to prolong the agony, then by all means continue to espouse the status quo.

Or maybe you鈥檙e hoping for a quick heart attack. Or perhaps dementia; no worries there.

The present alarming condition of our overall poor human health is too important to trivialize. Most people seem to be unaware we鈥檙e in a crisis and we need all our resources to overcome it, not perpetuate it. We really need to take seriously the reports, such as those from the non-profit group Knox refers to, and not make light of them.
